The main function of the Canopy is that grease laden fumes can be drawn through the canopy filters and extracted to atmosphere to assist in a safer and more comfortable working conditions. Regular internal cleaning of the Canopy and extract systems ensure that the air is correctly circulated around the work area and as such keeps aids in keeping the kitchen cleaner for longer, notwithstanding saving on replacement costs of fan units etc.
